Smoked Tuna

Tuna is a good choice for smoking because it has a high fat content. It is especially tasty with an Oriental-style dipping sauce.

Ingredients

GRILLING VINAIGRETTE:
¾ cup olive oil
1 tablespoon Dijon mustard
¼ teaspoon Tabasco sauce
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried thyme
2 cloves Caramelized Garlic
Salt and pepper to taste
Juice of ½ lemon
1 tablespoon balsamic vinegar
1 tablespoon dry white wine

Mix well and allowed to sit at room temperature to enhance its flavor.

1 cup Grilling Vinaigrette
1 tablespoon chopped fresh ginger
1 teaspoon soy sauce
½ teaspoon sesame oil
About 1 pound 1-inch-thick tuna steak
Dipping Sauce

Directions

Combine the Grilling Vinaigrette, ginger, soy sauce, and sesame oil in a non-reactive bowl. Add the tuna steak and marinate for 1 hour in the refrigerator, turning the tuna once or twice. Smoke the tuna for 45 to 50 minutes. Chill to serve. Serve with dipping sauce.

DIPPING SAUCE:
½ cup hoisin sauce
¼ cup catsup
2 tablespoons soy sauce

Combine ingredients in a small bowl and mix well.
